French Toast w Maple Butter and Berry Compote

This French toast will change your world!

Ingredients:

  • your choice of bread (wholegrain pictured)

  • eggs (3-12 depending on volume - you can always make more egg wash)

  • vanilla essence (optional)

  • cinnamon

  • butter (for frying and maple butter)

  • frozen mixed berries

  • maple syrup

Method:

  1. Whisk the eggs in a bowl, and add cinnamon and vanilla essence*

  2. Soak the bread in the egg wash, both sides

  3. While the bread is soaking, pour your berries into a saucepan, along with 1 tbsp water and place on a really low heat

  4. Heat some butter in a fry pan on a low heat and once the butter has melted and the bread has soaked on both sides, place the bread into the fry pan

  5. After 4-6 mins, or until the underside has browned perfectly, you can flip the bread over and repeat this step

  6. While the bread is cooking, put a couple of tbsp of butter into a bowl and add some maple syrup. Begin to whisk with a fork. Keep whisking until the maple butter is thickened and smooth. Adjust to your taste

  7. Keep stirring the berries to ensure they are reducing down and no longer frozen.

  8. Once the toast has cooked on both sides, put onto a plate, add the berries on top, then a scoop of the maple butter
