BUFFALO STYLE CHICKEN

Staying healthy over the holidays can be easy, if you put in a little bit of time and effort to stay on track to your health and fitness goals. 


Ingredients:

  • 1 kg (3-4) skinless chicken breast

  • ½ cup cider vinegar

  • ½ cup water

  • 3 tbsp cayenne pepper

  • 1 tsp dried oregano

  • 1 tsp garlic powder

  • 1 tsp ground Cumin

  • 1 tsp chili Powder

Method:

  1. Cut the chicken breast into strips.

  2. Place the chicken in a large glass container (or BPA free plastic container), and add the vinegar, water, and cayenne pepper. Allow the chicken to marinade for 15-30 mins.

  3. Preheat the oven to 180 C.

  4. Arrange the chicken pieces on a large baking sheet. Coat the chicken strips. Flip the pieces over, and sprinkle the other side with the remaining spice mix.

  5. Bake for about 20 minutes or until done.

Serve with a fresh salad and enjoy!

NOTE: You can also choose to cook the chicken in a pan or on the BBQ, but be careful not to dry it out.
