These date & nut balls are tasty, easy to make, healthy, and filled with all the calories you will need to pick you up and get you going again. Great for kids lunchboxes also (provided they can have a nut based food at their school).
3 DRIED FIGS
150G RAW CASHEWS
1/2 CUP ROLLED OATS
1/2 TSP DRIED GINGER
JUICE OF 1 LEMON
ZEST OF 1/2 LEMON
SOAK THE DATES AND FIGS IN BOILING WATER FOR 5 MINUTES.
ADD ALL THE OTHER INGREDIENTS INTO A FOOD PROCESSOR OR THERMOMIX.
BLEND UNTIL COMBINED AND MIXTURE HAS FORMED A DOUGH LIKE CONSISTENCY.
DRAIN THE WATER FROM THE DATES AND FIGS AND ADD THEM TO THE MIXTURE.
BLEND IT ALL TOGETHER UNTIL WELL COMBINED.
POUR SOME DESICCATED COCONUT INTO A STORAGE CONTAINER.
USING A TBSP, SCOOP THE MIXTURE INTO YOUR HAND AND ROLL BALLS.
PLACE THE BALL INTO THE COCONUT AND TOSS TO COAT THE OUTSIDE OF THE BALL.
REPEAT THIS PROCESS WITH THE REST OF THE MIX AND REFRIGERATE THE BATCH TO KEEP THEM NICE AND CHILLED.
